Who has recipes for using up rice?!

 The Question:

I’m looking for some fresh summer vegetarian meals. My boyfriend has bought a bag of rice the last three times he’s gone to the store and we usually only eat rice once or twice a month 

What did people say?

⇒ Lauri: Uncooked rice lasts up to 10 years. Store it in a glass container.

⇒ MJ Dusseau: A bowl. I don’t know about recipes. What ever I have in the fridge. Baby kale, rice, black-eyed peas, roasted brussels sprouts, green beans, pickled beets.

⇒ Janet: Bag up the rice in 1 cup portions and store in the freezer. Stays fresh and the pantry moths die.

⇒ Suzi: Vegetable-fried rice; apricot chicken with rice; chicken vegetable rice soup; or chicken Marbella with rice

⇒ Linda: Greek rice salad - cook rice, cool it. Add Greek salad ingredients (cucumber tomatoes peppers maybe corn) plus herbs and feta cheese. Top with a Greek dressing. Those that want meat can add it separately if they like.

⇒ Chris: My son likes to have just rice with some butter, salt and pepper on top.

⇒ Wanda: A refreshing rice and lemon (cold )soup, rice pancakes, rice porridge for breakfast, thai fried rice, bowls or wraps with whatever veggies you have

⇒ Fran: Rice casserole: 1 cup rice rinsed and soaked about 10 minutes. Chop up whatever veggies you want and spread in a 13 x 9” baking dish. Add 2 cups canned tomatoes (can be stewed, diced, sauce, etc.) depending on preference, 1 cup water and whatever seasonings and spices you prefer to a saucepan and simmer for 10-15 minutes. Pour the liquid over the veggies, cover and bake at 350 for an hour. Remove from oven and let sit covered another hour. I make 2 versions: 

  1. Mexican with black beans and corn included with the veggies and taco seasoning in the tomato sauce. 
  2. Italian with garbanzo beans and zucchini included in the veggies and Italian seasoning in the tomato mixture. 

You could make an Asian inspired version with soy sauce, ginger, rice vinegar, sweetener and garlic for the sauce. I haven’t tried the Asian version so get creative. Hope this helps. Enjoy!
